4 boneless, skinless chicken breasts

Juice of 1 lemon

For the Wild Rice Stuffed Peppers:

2 cups cooked wild rice (which requires about 1 cup uncooked wild rice)

4 large bell peppers (choose your favorite colors)

1 small onion, finely chopped

2 cloves garlic, minced

1 cup corn (fresh or frozen)

1 cup canned black beans, drained and rinsed

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and freshly cracked black pepper, to taste

1 cup shredded cheese (options include cheddar, Monterey Jack, or a cheese blend)

Fresh cilantro leaves for garnish

Prepare the Chicken: Preheat your oven to 375°F (190°C). In a mixing bowl, combine the olive oil, garlic powder, onion powder, thyme, rosemary, smoked paprika, salt, pepper, and lemon juice to create a marinade. Generously rub this flavorful mixture over the chicken breasts. Place the seasoned chicken in a baking dish and roast in the preheated oven for about 25-30 minutes, or until the internal temperature of the chicken reaches 165°F (74°C). Once cooked, let the chicken rest for 5 minutes before shredding or chopping it into bite-sized pieces.

    Prepare the Peppers: While the chicken is roasting, start prepping the bell peppers. Cut the tops off the peppers and remove all seeds and membranes for a clean filling.
