4-5 tablespoons ice water

1 cup ricotta cheese

½ cup grated Parmesan cheese

1 tablespoon fresh thyme leaves, chopped

1 tablespoon fresh basil, chopped

1 garlic clove, minced

Salt and pepper, to taste

2-3 medium tomatoes, thinly sliced

1 tablespoon olive oil, for drizzling

1 egg, beaten (for egg wash)

For Garnish:

Fresh basil leaves, for serving

A drizzle of balsamic glaze (optional)

Instructions
 

Prepare the Dough:

    - In a mixing bowl, combine the all-purpose flour, salt, and sugar. Using your fingers or a pastry cutter, incorporate the cold, cubed butter into the flour mixture until it resembles coarse crumbs.

      - Slowly add ice water, one tablespoon at a time, mixing gently until the dough starts to hold together. Form the dough into a disk, wrap it in plastic wrap, and chill in the refrigerator for at least 30 minutes to firm up.

            Preheat the Oven:

              - Preheat your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper.

                Roll Out the Dough:
