Ingredients

2 boneless, skinless chicken breasts

1 cup buttermilk

1 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon paprika

Salt and freshly ground black pepper to taste

1 head of romaine lettuce, chopped into bite-sized pieces

1 cup cherry tomatoes, halved

½ cup freshly grated Parmesan cheese

½ cup croutons (store-bought or homemade)

¼ cup Caesar dressing (store-bought or homemade)

Fresh parsley, finely chopped (for garnish)

Instructions

Marinate the Chicken: In a mixing bowl, whisk together the buttermilk, garlic powder, paprika, salt, and pepper until well combined. Add the chicken breasts, ensuring they are thoroughly coated in the marinade. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or ideally overnight, to allow the flavors to penetrate the chicken.

Prepare for Frying: Once the chicken has marinated, take it out of the fridge and let any excess buttermilk drip off. In a separate shallow bowl, mix the all-purpose flour, a pinch of salt, garlic powder, and paprika. Dredge each chicken breast in the flour mixture, ensuring they are fully coated for a crispy crust.

Fry the Chicken: Heat a generous amount of oil (about ½ inch deep) in a large skillet over medium-high heat. Once the oil is shimmering, carefully add the chicken breasts to the skillet. Fry for 5-7 minutes on each side or until they are golden brown and the internal temperature reaches 165°F (75°C). Once cooked, remove the chicken and let it rest on a plate lined with paper towels to absorb excess oil.

Prepare the Salad Base: In a large mixing bowl, combine the chopped romaine lettuce and halved cherry tomatoes. Add half of the grated Parmesan cheese and toss everything lightly to combine the ingredients evenly.

Slice the Chicken: After the chicken has cooled slightly, use a sharp knife to slice it into strips.

Assembly: Add the warm chicken strips on top of the tossed salad. Drizzle Caesar dressing generously over the top and toss gently to combine, ensuring the salad is evenly coated. Sprinkle the remaining Parmesan cheese over the salad, then add croutons for an added crunch.

Garnish and Serve: Transfer the assembled salad to individual serving plates. Garnish each plate with freshly chopped parsley for a pop of color, and enjoy your delectable crispy Chicken Caesar salad!
