Ingredients

1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup long-grain white rice

2 cups low-sodium chicken broth

2 tablespoons honey

2 tablespoons Dijon mustard

1 tablespoon olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup frozen peas

1 teaspoon dried thyme

1 teaspoon paprika

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Chicken: In a mixing bowl, combine the honey, Dijon mustard, and a pinch of salt and pepper. Add the bite-sized chicken pieces and toss until they are well-coated in the marinade. Allow the chicken to marinate for approximately 15 minutes to enhance the flavor profile.

Sauté the Aromatics: Heat the olive oil in a large skillet over medium heat. Once hot, add the finely chopped onion and sauté for about 3-4 minutes until it turns translucent and softens. Next, add the minced garlic and continue to cook for an additional 30 seconds, stirring frequently, until the garlic is fragrant.

Brown the Chicken: Increase the heat to medium-high. Add the marinated chicken pieces to the skillet. Cook the chicken for about 5-7 minutes, stirring occasionally, until the pieces develop a golden-brown crust and are cooked through.

Cook the Rice: Once the chicken is browned, pour in the chicken broth and add the rice, dried thyme, and paprika. Stir the mixture thoroughly to ensure everything is well combined. Bring the mixture to a boil over high heat.

Simmer: After reaching a boil, reduce the heat to low to maintain a gentle simmer. Cover the skillet with a lid and let it cook for 18-20 minutes, or until the rice is tender and has absorbed most of the liquid.

Add Peas: After the rice is cooked, remove the lid and add the frozen peas to the skillet. Stir gently to incorporate the peas, then cover the skillet again and let it sit for an additional 5 minutes to warm the peas through.

Final Touches: Taste the dish and feel free to adjust the seasoning with more salt and pepper, as needed. Use a fork to fluff the rice gently, ensuring a light and airy texture. Finish by sprinkling freshly chopped parsley over the dish for a pop of color and freshness.

Serve: Plate the Honey Dijon Chicken & Rice and enjoy the burst of sweet and tangy flavors in every delicious bite!
