Ingredients

For the Honey Garlic Chicken:

4 boneless, skinless chicken thighs

Salt and pepper, to taste

2 tablespoons olive oil

1/4 cup honey

4 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon apple cider vinegar

1 teaspoon sesame oil

1 teaspoon grated ginger

1 tablespoon chopped green onions (for garnish)

For the Sweet Corn Fritters:

1 cup fresh or canned sweet corn (drained)

1/2 cup all-purpose flour

1/4 cup cornmeal

2 large eggs

1/4 cup milk

1 teaspoon baking powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 cup finely chopped red bell pepper

1/4 cup chopped fresh cilantro (optional)

Olive oil for frying

Instructions

Prepare the Honey Garlic Chicken:

    - Season both sides of the chicken thighs generously with salt and pepper.

      - In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken thighs. Sear them for about 5-7 minutes on each side, or until they are golden brown and cooked through. Remove the chicken from the skillet and set aside on a plate.

        Make the Sauce:

          - In a mixing bowl, combine honey, minced garlic, soy sauce, apple cider vinegar, sesame oil, and grated ginger. Whisk together until the ingredients are thoroughly blended.

            - Pour the honey-garlic mixture into the same skillet where you cooked the chicken. Carefully scrape the bottom of the pan to loosen any browned bits, bringing the mixture to a gentle simmer. Allow it to cook for about 2-3 minutes, or until it slightly thickens.

              Combine Chicken and Sauce:

                - Return the seared chicken thighs to the skillet, making sure to turn them in the sauce so that they are evenly coated. Let them simmer in the sauce for an additional 5 minutes, ensuring the chicken is heated through and infused with flavor.

                  - Once completely coated, garnish the dish with the chopped green onions and set aside.

                    Prepare the Sweet Corn Fritters:

                      - In a mixing bowl, combine the flour, cornmeal, baking powder, salt, and black pepper. Stir the dry ingredients until well mixed.

                        - In a separate bowl, whisk together the eggs and milk until smooth. Next, stir in the drained sweet corn, red bell pepper, and chopped cilantro (if using).

                          - Gradually add the wet mixture to the dry ingredients, stirring until just combined. Avoid overmixing to maintain a light texture.

                            Fry the Fritters:

                              - Heat a non-stick skillet over medium heat and drizzle with olive oil. Allow the oil to reach a hot temperature.

                                - Using a spoon, drop dollops of the fritter batter into the skillet. Gently flatten each fritter with the back of a spatula for even cooking.

                                  - Fry for 3-4 minutes on each side until they are golden brown and crispy. Once cooked, transfer the fritters to a paper towel-lined plate to absorb any excess oil.

                                    Serve:

                                      - Arrange the Honey Garlic Chicken on plates alongside the Sweet Corn Fritters. Drizzle extra honey garlic sauce over the chicken for added flavor if desired. Serve immediately for the best taste and enjoy this scrumptious meal!
