Ingredients

1 cup fresh blackberries

1 cup Greek yogurt (choose plain or vanilla based on preference)

2 tablespoons honey (adjust according to your desired sweetness)

1 teaspoon vanilla extract

A pinch of salt

Optional: 1 tablespoon lemon juice (for a refreshing zesty flavor)

Mini muffin tin or silicone ice cube trays

Optional: Chopped nuts or granola for topping

Instructions

Prepare the Blackberries: Rinse the blackberries thoroughly under cold water and gently pat them dry with a clean kitchen towel. For a more bite-sized treat, you can cut the blackberries in half, but they can also be left whole for a bolder flavor.

Mix the Yogurt: In a medium-sized mixing bowl, combine the Greek yogurt, honey, vanilla extract, salt, and lemon juice (if using). Whisk the mixture vigorously until it achieves a uniform, smooth consistency. Taste and adjust the sweetness by adding more honey if desired.

Assemble the Bites: With a spoon, fill each cavity of the mini muffin tin or silicone ice cube trays halfway with the yogurt mixture, creating a base for the blackberries.

Add the Blackberries: Gently add one blackberry (or two for an extra burst of flavor) into each yogurt-filled section. Press them down slightly into the yogurt to ensure they are partially submerged for optimal flavor integration.

Top with More Yogurt: Use a small spoon to carefully add a little extra yogurt on top of each blackberry, completely covering them. For an added crunch, sprinkle chopped nuts or granola over the top if desired.

Freeze: Transfer the mini muffin tin or trays to the freezer and let them freeze for at least 4-6 hours, or until the yogurt is completely set and holds its shape.

Remove and Enjoy: Once frozen solid, carefully remove the yogurt bites from the muffin tin or trays. If they’re difficult to release, let them sit at room temperature for a few moments to soften slightly at the edges.

Storage: Store the Icy Blackberry Yogurt Bites in an airtight container in the freezer, where they can last for up to two weeks. Enjoy them as a refreshing snack or a healthy dessert option!

Prep Time: 15 minutes | Total Time: 4-6 hours | Servings: Makes about 12-15 bites
