Ingredients

2 lbs chicken pieces (drumsticks and wings)

1 cup all-purpose flour

1/2 cup cornstarch

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon baking powder

1 cup buttermilk (or substitute with 1 cup milk + 1 tablespoon lemon juice)

Vegetable oil (for frying)

For the Korean Sauce:

1/2 cup gochujang (Korean chili paste)

1/4 cup honey

1/4 cup soy sauce

3 tablespoons rice vinegar

3 cloves garlic, minced

1 tablespoon grated ginger

1 tablespoon sesame oil

Sesame seeds and chopped green onions (for garnish)

Instructions

Marinate the Chicken: In a large mixing bowl, combine the buttermilk with salt, black pepper, garlic powder, and onion powder. Add the chicken pieces to the marinade, ensuring they are thoroughly coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour (preferably overnight) to enhance the flavor and tenderness of the chicken.

Prepare the Coating: In a separate bowl, whisk together the all-purpose flour, cornstarch, salt, black pepper, garlic powder, onion powder, and baking powder until evenly mixed. Set this mixture aside for coating the chicken.

Heat the Oil: In a large deep skillet or Dutch oven, pour enough vegetable oil to reach a depth of about 2 inches. Heat the oil over medium-high heat until it reaches a temperature of 350°F (175°C). Use a thermometer to ensure accurate heating.

Coat the Chicken: Remove the marinated chicken from the refrigerator. Allow any excess marinade to drip off, then dip each piece into the flour mixture, pressing gently to ensure the coating adheres well. Place the coated chicken on a wire rack and let it rest for 10-15 minutes. This helps the coating stick better during frying.

Fry the Chicken: Carefully add the coated chicken pieces to the hot oil in small batches, ensuring not to overcrowd the pan. Fry the chicken for about 10-15 minutes, turning them occasionally, until they are golden brown and crispy. Check that the internal temperature reaches 165°F (75°C) for safe consumption.

Make the Korean Sauce: While the chicken is frying, prepare the sauce by combining gochujang, honey, soy sauce, rice vinegar, minced garlic, grated ginger, and sesame oil in a small saucepan. Heat the mixture over low heat, stirring continuously until it slightly thickens (about 5 minutes). Remove from heat and set aside.

Coat Fried Chicken with Sauce: Once all the chicken is fried and crispy, transfer the pieces to a large mixing bowl. Pour the Korean sauce over the chicken and toss gently until each piece is well coated. You can also serve the sauce on the side for dipping.

Serve and Garnish: Arrange the Korean fried chicken on a serving platter. Sprinkle sesame seeds and chopped green onions on top for added flavor and crunch. Serve the chicken hot alongside pickled radish or a refreshing salad for a delightful meal.
