1 cup fresh basil leaves, packed

1/4 cup pine nuts, toasted for enhanced flavor

1 garlic clove, peeled

1/2 cup freshly grated Parmesan cheese

1/3 cup extra virgin olive oil

Juice and zest of 1 large lemon

Salt and freshly cracked black pepper, to taste

1 cup cherry tomatoes, halved

8 oz fresh mozzarella balls (bocconcini or ciliegine)

Extra fresh basil leaves for garnish

Balsamic glaze, for drizzling

Prepare the Lemon Pesto: In a food processor, combine the fresh basil leaves, toasted pine nuts, peeled garlic clove, grated Parmesan cheese, lemon juice, lemon zest, a pinch of salt, and a few cracks of black pepper. Pulse the ingredients together until they are coarsely blended. While the processor is running, slowly stream in the extra virgin olive oil to create a smooth and creamy pesto.

    Mix the Caprese Filling: In a mixing bowl, gently combine the halved cherry tomatoes and fresh mozzarella balls. Drizzle a generous amount of the creamy lemon pesto over the mixture and gently toss to ensure everything is well-coated.
