Ingredients

1 lb (450g) ground beef (preferably 80/20 for optimal flavor)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and black pepper to taste

1 tablespoon olive oil (for cooking)

1 cup shredded cheddar cheese

1 large avocado, diced

½ cup cherry tomatoes, halved

¼ cup pickles, diced

½ cup mayonnaise

2 tablespoons Dijon mustard

1 head of Romaine or iceberg lettuce (for cups)

Fresh parsley or cilantro, chopped, for garnish

Instructions

Prepare the Cooking Surface: Place a large skillet over medium-high heat. Pour in the olive oil and let it heat up for about a minute until shimmering.

Cook the Beef: Add the ground beef to the hot skillet. Use a spatula to break the meat into smaller pieces as it cooks. Season the beef with garlic powder, onion powder, smoked paprika, salt, and black pepper. Stir frequently and cook until the meat is browned and fully cooked through, which should take around 6 to 8 minutes.

Assemble the Sauce: In a separate small bowl, combine the mayonnaise and Dijon mustard. Stir until they are well blended to create a creamy, tangy special sauce.

Prepare the Lettuce Cups: Carefully remove the leaves from the head of Romaine or iceberg lettuce. Aim to keep the leaves intact so they can hold all your delicious fillings. These crisp leaves will serve as your cups.

Assemble Each Cup: Take a single lettuce leaf and spoon a generous portion of the cooked beef mixture on top. Next, pile it high with shredded cheddar cheese, followed by diced avocado, halved cherry tomatoes, and diced pickles. Finally, drizzle the special sauce over the entire filling to enhance the flavors.

Garnish and Serve: For a vibrant finishing touch, sprinkle fresh parsley or cilantro on top of each assembled cup. Feel free to adjust the amount of toppings according to your personal preference. Serve the lettuce cups immediately for the best taste and freshness.

Enjoy Your Creation: Gather your loved ones around the table and relish these flavorful, low-carb cheeseburger lettuce cups while they're still warm and delightful!
