Ingredients

For the Crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

For the Cheesecake Filling:

16 oz cream cheese, softened to room temperature

¾ cup granulated sugar

2 large eggs, at room temperature

1 teaspoon vanilla extract

1 tablespoon fresh lemon juice

1 ½ cups fresh blueberries (or frozen, thawed and drained)

For the Blueberry Topping:

1 cup fresh blueberries

¼ cup granulated sugar

2 tablespoons fresh lemon juice

1 tablespoon cornstarch

1 tablespoon water

Instructions

Preheat the Oven: Start by preheating your oven to 325°F (160°C). Line an 8x8 inch baking pan with parchment paper, leaving some edges overhanging—this will help you lift the bars out easily later.

Make the Crust: In a mixing bowl, combine the graham cracker crumbs, melted butter, and ¼ cup sugar. Stir the mixture until it is well combined and resembles wet sand. Press this mixture firmly and evenly into the bottom of the prepared baking pan. Bake in the preheated oven for 8-10 minutes, or until the crust is golden brown. Once baked, remove it from the oven and allow it to cool slightly.

Prepare the Cheesecake Filling: In a large mixing bowl, using an electric mixer, beat the softened cream cheese on medium speed until it is smooth and creamy—this will take about 2-3 minutes. Gradually add in ¾ cup sugar, mixing until fully incorporated. Add the eggs one at a time, mixing well after each addition to ensure the mixture is smooth. Finally, stir in the vanilla extract and lemon juice until evenly mixed.

Add Blueberries: Gently fold in the fresh blueberries into the cream cheese mixture, taking care not to crush them to maintain their shape and flavor.

Bake the Cheesecake: Pour the cheesecake filling over the cooled crust, spreading it evenly with a spatula. Bake in the preheated oven for 35-40 minutes, or until the edges are set and the center has a slight jiggle. Once baked, turn off the oven and let the cheesecake cool inside with the oven door slightly ajar for about 1 hour—this helps prevent cracks on the surface.

Make the Blueberry Topping: In a small saucepan over medium heat, combine 1 cup of fresh blueberries, ¼ cup sugar, 2 tablespoons lemon juice, cornstarch, and water. Gently stir and cook for about 5-7 minutes, or until the mixture comes to a simmer and thickens, with the blueberries bursting in juices. Once ready, remove from heat and allow it to cool slightly before using.

Assemble the Bars: Once the cheesecake layer has cooled completely, pour the blueberry topping over it, spreading it evenly for a beautiful finish. Cover the pan with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.

Serve: When ready to serve, lift the cheesecake out of the pan using the overhanging parchment paper. Slice into bars of your desired size and serve chilled. Each bite delivers a delightful mix of creamy cheesecake and juicy blueberries—enjoy every luscious mouthful!
