Ingredients

For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

1 teaspoon ground cinnamon (optional for added warmth)

For the cheesecake filling:

16 ounces (2 packages) cream cheese, softened to room temperature

¾ cup granulated sugar

1 teaspoon pure vanilla extract

2 large eggs, at room temperature

½ cup sour cream

Zest of 1 lemon for brightness

1 ½ cups fresh blueberries (if using frozen, thaw and drain well)

For the blueberry topping:

1 cup fresh blueberries

2 tablespoons granulated sugar

1 tablespoon fresh lemon juice

1 teaspoon cornstarch mixed with 1 tablespoon water for thickening

Instructions

Preheat the Oven: Begin by preheating your oven to 325°F (160°C). Line a 9x9-inch baking pan with parchment paper, leaving some overhang to assist with easy removal after baking.

Prepare the Crust: In a mixing bowl, thoroughly combine the graham cracker crumbs, melted butter, granulated sugar, and cinnamon (if desired). The mixture should be evenly coated. Firmly press this crumb mixture into the bottom of the prepared baking pan, ensuring a smooth and even layer. Bake in the preheated oven for 10-12 minutes until the crust is lightly golden brown. Once baked, remove from the oven and allow it to cool completely in the pan.

Create the Cheesecake Filling: In a large mixing bowl, use an electric mixer to beat the softened cream cheese until it becomes smooth and creamy. Gradually add the granulated sugar, continuing to mix until well combined. Next, incorporate the vanilla extract, followed by the eggs one at a time, ensuring each is fully mixed before adding the next. Add the sour cream and lemon zest, mixing just until blended. Finally, gently fold in the fresh blueberries, taking care not to break them.

Bake the Cheesecake: Carefully pour the cheesecake filling over the cooled crust, using a spatula to spread it out evenly. Bake for approximately 30-35 minutes or until the edges are set but the center still has a slight jiggle. After baking, turn off the oven, crack open the oven door, and allow the cheesecake to cool inside for about 30 minutes to minimize cracking.

Prepare the Blueberry Topping: In a small saucepan over medium heat, combine 1 cup of blueberries, granulated sugar, and lemon juice. Cook for about 5 minutes, or until the blueberries begin to burst and the sugar is dissolved. Stir in the cornstarch mixed with water, cooking for an additional 2 minutes until the mixture thickens. Remove from heat and let it cool slightly.

Assemble the Bars: Once the cheesecake has cooled, carefully pour the blueberry topping over it, spreading the mixture evenly across the surface.

Chill: Cover the pan with plastic wrap or foil and refrigerate for a minimum of 4 hours, though overnight is ideal for perfecting the texture.

Serve: When ready to serve, lift the cheesecake bars out of the pan using the parchment paper overhang. Cut into squares and enjoy your luscious blueberry cheesecake bars!
