Mango Glazed Turkey

1 whole turkey (12-14 lbs)

2 cups fresh mango puree (approximately 3 ripe mangoes)

1/2 cup honey

1/4 cup soy sauce

1/4 cup freshly squeezed lime juice

4 cloves garlic, finely minced

1 tablespoon fresh ginger, grated

1 teaspoon ground cumin

1 teaspoon ground coriander

Salt and pepper to taste

Olive oil for rubbing

Fresh cilantro, chopped, for garnish

Instructions
 

Prep the Turkey:

    Begin by preheating your oven to 325°F (163°C). Rinse the turkey thoroughly under cold water, ensuring to wash the cavity as well. Pat the turkey completely dry with paper towels to remove excess moisture. If your turkey contains giblets, carefully remove them; you can discard them or save them for another recipe.

      Season the Bird:

        Generously rub the exterior of the turkey with olive oil, ensuring even coverage. Then, season the turkey generously with salt and pepper, focusing particularly on the breast and legs. This method not only enhances flavor but also contributes to achieving that desired crispy skin during roasting.

          Make the Mango Glaze:

            In a medium saucepan set over medium heat, combine the mango puree, honey, soy sauce, lime juice, minced garlic, grated ginger, cumin, and coriander. Stir the mixture well and bring to a gentle simmer. Allow it to cook for about 10 minutes, stirring occasionally, until the glaze has thickened slightly and is fragrant. Once finished, remove from heat and set aside.

              Glazing the Turkey:

                Place the seasoned turkey in a large roasting pan, breast side up. Using a brush or spoon, apply about half of the mango glaze over the turkey, ensuring all surfaces, including the inside of the cavity, are thoroughly covered.

                  Roast the Turkey:

                    Transfer the turkey to your preheated oven. Roast, basting the turkey with the remaining mango glaze every 30 minutes, ensuring to spoon the delicious mixture over the turkey for a flavorful finish. The turkey is done when it reaches an internal temperature of 165°F (74°C) in the thickest part of the thigh. The cooking time typically averages 13-15 minutes per pound; thus, a 12-14 lbs turkey will require approximately 2.5 to 3.5 hours of roasting.

                      Rest and Garnish:

                        Once cooked, carefully remove the turkey from the oven. Let it rest for at least 20-30 minutes before carving; this vital step allows the juices to redistribute throughout the meat, ensuring each slice is juicy and tender. Prior to serving, sprinkle with chopped fresh cilantro for a pop of color and flavor.

                          Serve:

                            Carve the turkey into desired portions and arrange on a platter. Serve with any remaining mango glaze on the side for drizzling. Pair with your favorite festive sides for a complete meal that will impress your guests.
