Mediterranean Grilled Veggie Wraps

2 large whole wheat tortillas or wraps

1 medium zucchini, sliced into thin rounds

1 red bell pepper, sliced into strips

1 yellow bell pepper, sliced into strips

1 small red onion, sliced into rings

1 cup cherry tomatoes, halved

1 cup baby spinach

1/2 cup feta cheese, crumbled

1/4 cup black olives, pitted and sliced

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon garlic powder

Salt and freshly ground black pepper, to taste

Optional: Hummus or tzatziki sauce for spreading

Prep the Vegetables: In a large mixing bowl, combine the sliced zucchini, red and yellow bell peppers, red onion rings, and halved cherry tomatoes. Drizzle with olive oil, then sprinkle the dried oregano, garlic powder, salt, and pepper evenly over the vegetables. Gently toss to ensure all veggies are well coated with the oil and seasonings.

    Grill the Vegetables: Preheat your grill or a grill pan to medium-high heat. Once hot, add the seasoned vegetables in a single layer. Grill for approximately 5-7 minutes, turning occasionally to achieve even char marks and tenderness. Once cooked, remove the vegetables from the grill and set aside to cool slightly.

      Assemble the Wraps: Place the tortillas flat on a clean work surface or cutting board. If using, spread a generous layer of hummus or tzatziki sauce across each tortilla, leaving a small border around the edge. In the center of each tortilla, pile a handful of fresh baby spinach.

        Add Grilled Veggies: Carefully distribute the grilled vegetables evenly between the two wraps, layering them on top of the spinach. Sprinkle the crumbled feta cheese and sliced black olives over the vegetables for added flavor and texture.

          Wrap it Up: To enclose the fillings, fold in the sides of each tortilla and then roll them tightly from the bottom to the top. Make sure to keep all the delicious fillings secured inside. Repeat the process with the second tortilla.
