8 small corn tortillas

1 cup shredded cheddar cheese

1 cup black beans, drained and rinsed

4 large eggs

1/4 cup milk

Salt and black pepper, to taste

1 ripe avocado, diced

1 medium tomato, diced

1/4 cup fresh cilantro, chopped

1 jalapeño, sliced (optional for heat)

Sour cream, for topping (optional)

Lime wedges, for serving

Instructions
 

Preheat the Oven: Start by preheating your oven to 375°F (190°C). Lightly grease a muffin tin using cooking spray to prevent sticking.

    Shape the Tortillas: Using a cookie cutter, cut each corn tortilla into circles that will fit snugly into the muffin cups. Gently press each tortilla into a muffin cup to create a bowl shape, ensuring it conforms to the contours of the tin.

      Layer Cheese and Beans: Into each tortilla cup, sprinkle approximately 1 tablespoon of shredded cheddar cheese, followed by 1 tablespoon of black beans. This will create a flavorful base.

        Whisk the Egg Mixture: In a medium mixing bowl, whisk together the eggs, milk, and a pinch of salt and pepper until fully combined and slightly frothy.

          Fill the Tortilla Cups: Carefully pour the egg mixture into each tortilla cup, filling them about three-quarters full. This allows for the eggs to puff up as they bake.

            Bake the Cups: Place the muffin tin in the oven and bake for 15 to 20 minutes, or until the eggs are set and fully cooked, and the tortilla edges are lightly crispy.
