Ingredients

1 lb boneless, skinless chicken breasts, diced into bite-sized pieces

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon smoked paprika

Salt and black pepper, to taste

1 bell pepper (any color), sliced into thin strips

1 small onion, sliced into thin strips

1 cup shredded cheddar cheese

1/2 cup sour cream

1/4 cup fresh cilantro, chopped finely

12 mini taco cones or tortilla cups (store-bought or homemade)

Lime wedges, for serving

Instructions

Prepare the Chicken: In a medium mixing bowl, combine the diced chicken pieces with olive oil, ground cumin, chili powder, smoked paprika, salt, and black pepper. Toss the chicken until all pieces are evenly coated with the seasonings.

Cook the Chicken: Heat a large skillet over medium heat. Once hot, add the seasoned chicken to the skillet. Cook the chicken for about 5-7 minutes, stirring occasionally, until it is fully cooked and no longer pink in the center. Remove the chicken from the skillet and transfer it to a plate to keep it warm.

Sauté the Veggies: In the same skillet, add the sliced onion and bell pepper. Sauté them over medium heat for about 5 minutes, or until they are softened and lightly caramelized. Stir frequently for even cooking.

Combine: Return the cooked chicken to the skillet with the sautéed vegetables. Stir well to combine and cook together for an additional 2-3 minutes to let the flavors blend. Remove from heat.

Assemble the Taco Cones: For store-bought mini cones, position them upright on a serving platter. If using homemade tortilla cups, gently press them into a muffin tin to help them hold their shape. Fill each cone or cup generously with the chicken and vegetable mixture.

Add Toppings: Sprinkle a layer of shredded cheddar cheese over each filled cone, allowing it to melt slightly from the heat of the filling. Drizzle sour cream on top and finish with a sprinkle of freshly chopped cilantro for a vibrant touch.

Serve: Present your Mini Chicken Fajita Taco Cones warm, accompanied by lime wedges for an extra kick of flavor. Squeeze the lime juice over the cones for a refreshing finish. Enjoy your delicious creations!
