For the Tzatziki Sauce:

1 cup plain Greek yogurt

½ cucumber, coarsely grated and excess moisture drained

1 clove garlic, finely minced

1 tablespoon extra virgin olive oil

1 tablespoon fresh dill, finely chopped

1 tablespoon lemon juice

Sea salt and pepper to taste

For the Sliders:

12 mini pita breads

1 cup cherry tomatoes, halved

1 cup shredded romaine lettuce

Crumbled feta cheese (optional for garnish)

Fresh parsley, chopped (for garnish)

Marinate the Chicken: In a large mixing bowl, whisk together the olive oil, Greek yogurt, minced garlic, oregano, cumin, smoked paprika, salt, pepper, and lemon juice until smooth. Add the chicken thighs, ensuring they are fully coated in the marinade. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or for optimal flavor, overnight.

    Prepare the Tzatziki Sauce: In a separate medium bowl, stir together the Greek yogurt, grated cucumber, minced garlic, olive oil, chopped dill, lemon juice, salt, and pepper. Mix until evenly combined. Cover and refrigerate this sauce until you're ready to serve, allowing the flavors to meld.

      Cook the Chicken: Preheat your grill or grill pan to medium-high heat. Remove the marinated chicken thighs from the refrigerator, allowing any excess marinade to drip off.
