Ingredients

1 package (50 count) wonton wrappers

1 cup cooked chicken, shredded or diced

1/2 cup pesto (store-bought or homemade)

1 cup cherry tomatoes, halved

1 cup mozzarella cheese, shredded

1/4 cup grated Parmesan cheese

1 tablespoon olive oil

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) to ensure it is hot and ready for baking.

Prepare the Wonton Wrappers: Take a mini muffin tin and lightly grease each cup with olive oil using a brush or your fingers. Carefully press a wonton wrapper into each muffin cup, forming a small cup shape. For added strength, you may layer a second wonton wrapper in each cup, creating a sturdier base.

Mix the Filling: In a large mixing bowl, combine the shredded or diced cooked chicken with the pesto. Season the mixture with salt and pepper to taste, stirring well to ensure the chicken is evenly coated.

Assemble the Cups: Spoon a generous amount of the chicken-pesto mixture into each wonton cup, filling them to nearly the top without overflowing.

Add the Toppings: Evenly sprinkle shredded mozzarella cheese over the top of each filled wonton cup, followed by a few halved cherry tomatoes placed strategically on top of the cheese for both visual appeal and flavor enhancement.

Bake: Place the muffin tin in the preheated oven and bake for approximately 12-15 minutes. Keep a close watch during the last few minutes of baking to achieve a golden brown color without letting them over-brown. The cheese should be bubbly and melted.

Finishing Touch: Once baked, remove the tin from the oven and lightly sprinkle grated Parmesan cheese over the warm wonton cups. Allow them to cool for a few minutes before transferring to a serving platter.

Garnish and Serve: If desired, garnish the tops of the cups with fresh basil leaves for an aromatic touch and serve warm as delightful appetizers or snacks at your next gathering.
