1 cup panko breadcrumbs (substitute with regular breadcrumbs if needed)

1/2 cup grated Parmesan cheese

1 large egg

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon freshly ground black pepper

1 cup marinara sauce (for dipping and topping)

Mini or regular-sized slider buns

Olive oil spray or a light drizzle of olive oil for frying

Preheat the Oven: Set your oven to 400°F (200°C) and prepare a baking sheet by lining it with parchment paper. This will prevent sticking and make for easy cleanup.

    Prepare the Zucchini: Using a box grater, grate the zucchini into a mixing bowl. Sprinkle the grated zucchini generously with salt and let it sit for approximately 10 minutes. This step will help draw out excess water. After resting, take a clean kitchen towel and place the salted zucchini in it. Squeeze firmly to expel as much moisture as possible, ensuring your sliders hold together nicely.

      Mix Ingredients: In a large mixing bowl, add the drained zucchini along with panko breadcrumbs, grated Parmesan, the egg, garlic powder, onion powder, dried oregano, salt, and black pepper. Use a spatula or your hands to mix thoroughly until all ingredients are well incorporated, forming a cohesive mixture that can easily be shaped into patties.

        Form Sliders: With lightly greased hands, take portions of the mixture and shape them into small patties, roughly 2 inches in diameter. Place the formed patties on the prepared baking sheet, ensuring they are spaced out evenly.
