Mini Grilled Corn and Avocado Tacos

1 cup fresh corn kernels (approximately 2 ears of corn)

2 ripe avocados, diced into bite-sized pieces

1 small red onion, finely chopped

1 jalapeño, deseeded and minced (optional, for a spicy kick)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

1 teaspoon ground cumin

Salt and pepper, to taste

8 small corn tortillas

Olive oil, for grilling

Crumbled queso fresco or feta cheese, for garnish (optional)

Instructions
 

Prepare the Corn: If using fresh corn, grill the cobs over medium heat for 10-12 minutes, turning occasionally until they are evenly charred. Once done, remove from the grill and allow to cool. Carefully cut the kernels off the cob. If using canned or frozen corn, sauté the corn in a pan until slightly charred to enhance its flavor.

    Mix the Avocado Filling: In a mixing bowl, combine the diced avocados, chopped red onion, minced jalapeño (if using), cilantro, lime juice, ground cumin, salt, and pepper. Gently fold the ingredients together with a spoon, taking care not to mash the avocado too much. Set this mixture aside to allow the flavors to meld together.

      Heat the Tortillas: In a dry skillet or on the grill, warm the corn tortillas for about 30 seconds on each side until they become soft and pliable. For an extra flavor boost, you may lightly brush each tortilla with olive oil before heating.

        Assemble the Tacos: For each taco, take two warmed tortillas and spoon a generous amount of the grilled corn mixture into the center of each one. Layer the avocado mixture on top, allowing some of the filling to spill over the edges for a casual and inviting presentation.

          Serve: Optionally, sprinkle crumbled queso fresco or feta cheese on top for a creamy finish. Serve the tacos immediately with lime wedges on the side, encouraging guests to drizzle additional lime juice to their taste.
