12 small ripe tomatoes (such as Campari or cherry tomatoes)

1 cup fresh mozzarella balls (bocconcini)

1/4 cup fresh basil pesto

2 tablespoons extra virgin olive oil

1 tablespoon balsamic vinegar

1 clove garlic, finely minced

Salt and freshly ground pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Prepare the Tomatoes: Carefully slice the tops off each tomato to create a small opening. Using a small spoon or a melon baller, gently hollow out the insides of the tomatoes, taking care to keep the walls intact. Set aside the scooped-out insides for future use, such as in a salad or sauce.

      Mix the Filling: In a medium mixing bowl, combine the fresh mozzarella balls, basil pesto, extra virgin olive oil, balsamic vinegar, minced garlic, and a pinch of salt and pepper. Stir thoroughly until the mozzarella is beautifully coated with the pesto mixture.

        Stuff the Tomatoes: Using a small spoon, carefully spoon the mozzarella and pesto filling into each hollowed tomato. Ensure to pack the filling lightly but firmly to make the most of the available space.

          Bake the Tomatoes: Arrange the stuffed tomatoes upright in a baking dish. Drizzle a little extra olive oil over the tops and sprinkle with additional salt and pepper if desired.
