Ingredients

1 pound breakfast sausage (choose mild for family-friendly flavor or spicy for heat)

2 cups all-purpose flour

1 tablespoon baking powder

½ teaspoon salt

½ teaspoon garlic powder

½ cup unsalted butter, cold and cut into small cubes

1 cup shredded sharp cheddar cheese

¾ cup milk

2 tablespoons Dijon mustard (optional, for an extra flavor boost)

Fresh chives or parsley, finely chopped (for garnish)

Instructions

Preheat Oven: Begin by preheating your oven to 450°F (232°C). Prepare a baking sheet by lining it with parchment paper, which will help prevent sticking.

Cook Sausage: In a medium skillet over medium heat, add the breakfast sausage. Cook, breaking it apart with a spatula, until it is nicely browned and cooked through, about 5-7 minutes. Once done, drain any excess fat and allow the sausage to cool slightly.

Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, baking powder, salt, and garlic powder until well combined.

Cut in Butter: Incorporate the cubed cold butter into the flour mixture. Using a pastry cutter or your fingertips, blend the mixture until it resembles coarse crumbs, ensuring there are no large chunks of butter remaining.

Add Cheese and Sausage: Gently fold in the shredded sharp cheddar cheese and the cooked sausage until distributed evenly throughout the mixture.

Add Milk: Gradually pour in the milk (and Dijon mustard, if you choose to use it). Stir gently until everything is just combined. Avoid overmixing; the dough should remain slightly sticky.

Form Biscuits: Transfer the dough onto a lightly floured surface. Using your hands, gently pat the dough into a thickness of about ¾ inch. With a round biscuit cutter or a glass (approximately 2 inches in diameter), cut out mini biscuits and arrange them on the prepared baking sheet. Gather any scraps, re-pat the dough, and continue cutting until all the dough is used.

Bake: Place the biscuits in your preheated oven and bake for 12-15 minutes, or until they are lightly golden brown on top.

Optional Broil: For an added touch of indulgence, during the last 2-3 minutes of baking, sprinkle a little extra shredded cheddar on top of the biscuits. Alternatively, you can place them under the broiler for about a minute until the cheese is bubbly and golden—stay close and keep an eye on them to prevent burning!

Garnish: Once baked, remove the biscuits from the oven and allow them to cool for a few minutes. Before serving, sprinkle them with freshly chopped chives or parsley for a burst of color and flavor.

Prep Time, Total Time, Servings: 15 minutes | 30 minutes | 12-16 biscuits

Optional Serving Suggestion: Serve warm with a side of homemade honey mustard or your favorite dipping sauce for an irresistible snack!
