2 large cucumbers

1 can (5 oz) of tuna in water, drained

3 tablespoons Greek yogurt or mayonnaise

1 tablespoon Dijon mustard

1 tablespoon fresh lemon juice

1 celery stalk, finely diced

1 green onion, finely sliced

Salt and freshly ground black pepper, to taste

Fresh dill or parsley, for garnish

Optional toppings: sliced black olives, halved cherry tomatoes, or avocado slices

Prep the Cucumbers: Start by thoroughly washing and drying the cucumbers. Cut each cucumber in half lengthwise, then use a small spoon or a melon baller to carefully scoop out the seeds from the center, creating 'boats'. Ensure you do not pierce through the sides of the cucumber. Set the prepared cucumber boats aside.

    Create the Tuna Filling: In a medium-sized mixing bowl, combine the drained tuna with Greek yogurt (or mayonnaise), Dijon mustard, lemon juice, finely diced celery, and sliced green onion.
