1 pound ground turkey

1 tablespoon olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 packet taco seasoning (or a homemade mix: 1 tablespoon chili powder, 1 teaspoon cumin, 1 teaspoon paprika, and salt to taste)

1 cup diced tomatoes (can use canned or fresh)

1/2 cup black beans, rinsed and drained

1 cup corn (can use canned or frozen)

Salt and pepper, to taste

1 head of romaine or butter lettuce, with leaves separated

1 avocado, diced

1 cup shredded cheese (cheddar or Mexican blend)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Prepare the Filling: In a large skillet, heat the olive oil over medium heat. Once hot, add the finely chopped onion and sauté for about 3-4 minutes, or until it becomes translucent. Next, stir in the minced garlic and cook for an additional 1 minute, until fragrant.

    Cook the Turkey: Add the ground turkey to the skillet, breaking it apart with a spatula. Cook for 5-7 minutes, stirring occasionally, until the turkey is fully cooked and no longer pink. Carefully drain any excess fat from the skillet.

      Season It Up: Incorporate the taco seasoning into the turkey mixture, along with the diced tomatoes, black beans, and corn.
