6 large eggs

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/4 cup milk

1/2 teaspoon dried oregano

1/4 teaspoon red pepper flakes (optional for heat)

1/4 cup finely chopped green onions

1 French baguette or whole-grain bread, sliced into 1/2-inch thick pieces

Preheat the oven: Set your oven to 375°F (190°C). Prepare a baking sheet by lining it with parchment paper or using a silicone baking mat.

    Prepare the zucchini: Place the grated zucchini in a colander and sprinkle it lightly with salt. Allow it to drain for 10-15 minutes, which will help remove excess moisture. After draining, use your hands to squeeze the zucchini, ensuring you remove as much liquid as possible.

      Make the egg mixture: In a large mixing bowl, thoroughly whisk together the eggs, milk, salt, black pepper, garlic powder, dried oregano, and red pepper flakes (if using). Once combined, fold in the drained zucchini, shredded mozzarella, grated Parmesan, and chopped green onions until everything is well combined.
