4 boneless, skinless chicken breasts

2 tablespoons olive oil

1 teaspoon Italian seasoning

Salt and pepper to taste

1 medium onion, finely chopped

3 cloves garlic, minced

1 bell pepper (any color), sliced into thin strips

1 cup cherry tomatoes, halved

1 cup fresh baby spinach

1 cup marinara sauce

½ cup fresh basil leaves, finely chopped

½ cup mozzarella cheese, shredded

Grated Parmesan cheese for serving

Instructions
 

Prepare the chicken: Begin by seasoning the chicken breasts generously with Italian seasoning, salt, and pepper on both sides to enhance the flavor.

    Sear the chicken: Heat the olive oil in a large skillet over medium-high heat until shimmering. Carefully add the seasoned chicken breasts to the skillet and sear them for approximately 6-7 minutes on each side, or until they are golden brown and cooked through (internal temperature should reach 165°F/75°C). Once cooked, remove the chicken from the skillet and set aside on a plate.

      Sauté the vegetables: Reduce the heat to medium and in the same skillet, add the chopped onion and slices of bell pepper. Sauté the vegetables for about 4-5 minutes, stirring occasionally, until they become soft and translucent. Then, add the minced garlic and cook for an additional minute, stirring until fragrant.

        Add the tomatoes and spinach: Mix in the halved cherry tomatoes and fresh baby spinach, stirring everything together. Cook for about 2-3 minutes, or until the spinach is wilted and the tomatoes begin to soften.

          Combine with sauce: Pour the marinara sauce into the skillet, ensuring that all the vegetables are well-coated. Stir to combine and allow the mixture to simmer for 2-3 minutes, letting the flavors meld together.

            Return chicken to the skillet: Place the seared chicken breasts back into the skillet, nestling them among the vegetables and spooning some sauce over the top. Evenly sprinkle the shredded mozzarella cheese over the chicken.

              Melt the cheese: Cover the skillet with a lid and reduce the heat to low. Cook for an additional 2-3 minutes, until the mozzarella is fully melted and bubbly.
