1 cup shredded carrots (approximately 2 medium-sized carrots)

1/2 cup almond butter (or substitute with peanut butter)

1/4 cup honey or maple syrup

1/4 cup unsweetened shredded coconut

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 cup chopped walnuts (optional)

1/4 cup raisins or dried cranberries

A pinch of salt

Prep the Carrots: Begin by thoroughly washing and peeling the carrots. Grate the carrots using a fine grater or a food processor until you have approximately 1 cup of shredded carrots. Set this aside for later.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, unsweetened shredded coconut, ground cinnamon, ground nutmeg, and a pinch of salt. If you choose to include walnuts and your dried fruit (raisins or cranberries), add those in as well. Stir the mixture well until evenly distributed.

      Combine Wet Ingredients: In a separate bowl, blend the almond butter or peanut butter with honey or maple syrup until you achieve a smooth consistency and both are well incorporated.
