Ingredients

2 cups rolled oats

1 cup almond butter or peanut butter

1/2 cup honey or maple syrup

1/2 cup unsweetened cocoa powder

1/4 teaspoon salt

1 teaspoon vanilla extract

1/2 cup dark chocolate chips or dairy-free chocolate chips

1/4 cup shredded coconut (optional)

1/4 cup chopped nuts (such as almonds or walnuts, optional)

Instructions

Prepare the Pan: Begin by lining an 8x8-inch square baking dish with parchment paper. Leave some parchment paper hanging over the edges for easy removal once the bars are set.

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, cocoa powder, and salt. If desired, add the shredded coconut and chopped nuts at this stage for added texture and flavor.

Blend Wet Ingredients: In another bowl, combine the almond butter, honey (or maple syrup), and vanilla extract. Stir until the mixture is smooth and well-blended. If the almond butter is too firm, microwave it for 20-30 seconds to soften it for easier mixing.

Combine Mixtures: Pour the wet ingredient mixture into the bowl containing the dry ingredients. Stir vigorously until all components are well mixed and you achieve a thick, sticky dough-like consistency.

Add Chocolate Chips: Gently fold in the dark chocolate chips, ensuring they are evenly distributed throughout the mixture.

Press into Pan: Transfer the combined mixture into the prepared baking dish. Use a spatula or your hands to press the mixture down firmly and evenly to form a compact layer at the bottom of the dish.

Chill in the Fridge: Place the baking dish in the refrigerator and allow the mixture to chill for at least 2 hours, or until it firms up sufficiently for cutting.

Cut and Serve: Once the mixture is firm, lift the bars out of the pan using the overhanging parchment paper. Cut into squares or rectangles as desired, and savor your delightful no-bake chocolate oat bars!

Store: Keep any leftover bars in an airtight container in the refrigerator, where they will stay fresh for up to one week.

Prep Time: 15 minutes | Total Time: 2 hours 15 minutes | Servings: 12 bars

                      - Presentation Tips: For an extra touch, dust the top with a little extra cocoa powder or drizzle with melted chocolate before cutting. Arrange the bars on a serving platter and garnish with a sprinkle of shredded coconut for an appealing look.
