Ingredients

4 boneless, skinless chicken breasts

Salt and pepper, to taste

1 cup all-purpose flour

2 large eggs, lightly beaten

1 cup seasoned breadcrumbs

1 cup marinara sauce

1 ½ cups shredded mozzarella cheese

½ cup grated Parmesan cheese

4 cups fresh spinach

2 tablespoons olive oil

1 teaspoon dried Italian herbs (oregano, basil, thyme)

½ teaspoon red pepper flakes (optional, for a little heat)

Fresh basil leaves, for garnish

Instructions

Prepare the Chicken: Preheat your oven to 400°F (200°C). Season the chicken breasts generously with salt and pepper on both sides to enhance the flavor. Set up a dredging station with three shallow dishes: one filled with the all-purpose flour, the second with the beaten eggs, and the third with seasoned breadcrumbs.

Dredge the Chicken: Take each chicken breast and dip it first into the flour, making sure to shake off any excess flour. Next, coat the chicken in the beaten eggs, allowing any excess to drip off. Finally, roll the chicken in the seasoned breadcrumbs, pressing lightly to ensure an even coating. Set the coated chicken aside for a few minutes; this resting period allows the coating to stick better during cooking.

Sear the Chicken: In a large, oven-safe skillet, heat the olive oil over medium heat. Once the oil is shimmering, add the breaded chicken breasts to the skillet. Sear each breast for approximately 3-4 minutes on each side, or until they achieve a beautiful golden brown color. If necessary, sear the chicken in batches, avoiding overcrowding which can lead to steaming instead of searing.

Add Spinach: After browning the chicken, reduce the heat to low and carefully arrange the fresh spinach around the chicken in the skillet. Allow the spinach to cook for about 2-3 minutes, stirring occasionally until it has wilted and reduced in volume.

Layer Sauces and Cheese: Gently pour the marinara sauce over the chicken breasts, ensuring they are evenly coated. Top the sauced chicken with a generous sprinkle of mozzarella cheese and then the grated Parmesan cheese. Finally, sprinkle the dried Italian herbs and red pepper flakes over the cheese for added flavor.

Bake: Transfer the skillet to the preheated oven and bake for approximately 20-25 minutes. Ensure the chicken is cooked through, with an internal temperature reaching 165°F (75°C) and the cheese is melted, bubbly, and golden brown upon completion.

Serve: Remove the skillet from the oven and allow it to rest for a few minutes before serving. Garnish with fresh basil leaves for a pop of color and flavor. Enjoy this hearty One-Pan Chicken Parmesan accompanied by garlic bread or a crisp side salad for a delightful meal.
