2 teaspoons active dry yeast

2 tablespoons honey

2 cups all-purpose flour (plus extra for dusting)

1 teaspoon salt

2 tablespoons olive oil (plus more for brushing)

2 ripe peaches, thinly sliced

½ cup ricotta cheese

¼ cup goat cheese, crumbled

2 tablespoons fresh thyme leaves (or 1 tablespoon dried thyme)

2 tablespoons balsamic glaze

Fresh arugula for topping (optional)

Activate the Yeast: In a small bowl, combine the warm water, active dry yeast, and honey. Stir gently, then let the mixture sit for about 5 minutes or until it becomes bubbly and frothy, indicating that the yeast is active.

    Make the Dough: In a large mixing bowl, whisk together the flour and salt. Form a well in the center, then pour in the activated yeast mixture along with the olive oil. Using a spoon or your hands, mix the ingredients until a shaggy dough starts to form.

      Knead the Dough: Lightly flour your countertop and transfer the dough onto it. Knead the dough for about 5-7 minutes, or until it becomes smooth and elastic. Once ready, place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm, draft-free area for 1 hour, or until doubled in size.
