2 ripe peaches, sliced into thin wedges

1 tablespoon extra-virgin olive oil

1 red bell pepper, cut into thin strips (julienned)

1 cup snap peas, trimmed of both ends

3 cloves garlic, finely minced

1 teaspoon fresh ginger, freshly grated

2 tablespoons soy sauce

1 tablespoon honey

1 tablespoon rice vinegar

1 cup fresh basil leaves, loosely packed and torn if large

Salt and freshly ground black pepper to taste

Cooked jasmine or brown rice, for serving

Prepare the Sauce: In a small bowl, combine the soy sauce, honey, and rice vinegar. Whisk them together until well mixed and set aside for later use.
