1 cup snap peas, with ends trimmed

1 medium carrot, julienned

1 cup broccoli florets

3 cloves garlic, finely minced

1 tablespoon fresh ginger, finely minced

2 tablespoons soy sauce (or tamari for a gluten-free option)

1 tablespoon honey or maple syrup

1 tablespoon sesame oil

1 tablespoon vegetable oil (for stir-frying)

1 teaspoon cornstarch mixed with 2 tablespoons water (optional for thickening)

Salt and pepper, to taste

Sesame seeds, for garnish

Prepare Your Ingredients: Begin by washing all the vegetables thoroughly. Slice the peach into wedges and julienne the carrot. Have all ingredients prepped and within reach - this will ensure a smooth and quick stir-fry process.

    Heat the Oil: In a large skillet or a wok, pour in the vegetable oil. Heat over medium-high heat until it shimmers, indicating it’s hot enough for cooking.

      Sauté Aromatics: Add the minced garlic and ginger to the hot oil. Stir-fry for approximately 30 seconds, just until fragrant. Be careful to avoid burning them, as burnt garlic can taste bitter.

        Add Harder Vegetables: Introduce the sliced bell pepper, julienned carrot, and broccoli florets to the skillet. Stir-fry these vegetables for about 3-4 minutes, allowing them to soften slightly while still retaining a pleasant crunch.
