3 ripe peaches, pitted and chopped

1/2 cup honey or maple syrup (feel free to adjust according to your sweetness preference)

1 1/2 cups Greek yogurt (plain or vanilla works well)

1/2 teaspoon vanilla extract

1 tablespoon fresh lemon juice

A pinch of salt

Optional: Fresh mint leaves for garnish

Prepare the Peaches: In a blender or food processor, blend the chopped peaches until you achieve a smooth puree. If you prefer a bit of texture, pulse the mixture a few times to leave some chunks of peach intact.

    Sweeten the Mixture: To the peach puree, add the honey (or maple syrup), fresh lemon juice, and a pinch of salt. Blend for an additional 30 seconds to ensure everything is well combined. Taste the mixture and adjust the sweetness if needed.

      Mix the Yogurt: In a separate mixing bowl, combine the Greek yogurt and vanilla extract. Stir well until the mixture is smooth and creamy, ensuring there are no lumps.

        Layer the Mixture: Begin by pouring a layer of the peach puree into the bottom of your popsicle molds, filling them about one-third full. Next, add a layer of the yogurt mixture, filling the molds another third of the way. Finally, top off each mold with more peach puree until they are nearly full.

          Insert Sticks: If your popsicle molds come with sticks, insert them right away. If not, freeze the molds for about an hour until the mixture is slightly solid, then carefully insert wooden sticks into the center of each popsicle.

            Freeze: Place the molds in the freezer and allow them to freeze for at least 4-6 hours, or until they are completely solid.

              Unmold and Serve: To release the popsicles, run warm water over the outside of the molds for a few seconds, then gently pull the popsicles out. Serve them immediately and consider garnishing with fresh mint leaves for a refreshing touch.
