2 cups cooked jasmine rice (preferably chilled, day-old rice works best)

1 cup boneless chicken breast, diced into bite-sized pieces

1 cup fresh pineapple, diced into small chunks

1/2 cup frozen peas and carrots mix

1/2 cup red bell pepper, finely chopped

3 green onions, chopped (white and green parts kept separate)

3 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon oyster sauce (optional for an enhanced flavor)

1 tablespoon sesame oil

2 tablespoons vegetable oil

Salt and pepper to taste

Fresh cilantro or basil leaves for garnish (optional)

Lime wedges for serving

Prepare the Rice: If you're using freshly cooked rice, spread it evenly on a baking sheet to cool down and allow excess moisture to evaporate. This will help keep the rice grains separate while frying.

    Cook the Chicken: In a large wok or skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Once hot, add the diced chicken. Season with salt and pepper. Stir-fry for about 5-7 minutes, or until the chicken is fully cooked and lightly golden in color. Transfer the cooked chicken to a plate and set aside.

      Sauté Vegetables: In the same wok, add the remaining tablespoon of vegetable oil. Add in the minced garlic and the white parts of the green onions. Sauté for about 30 seconds until fragrant. Next, toss in the finely chopped red bell pepper along with the frozen peas and carrots mix. Continue to stir-fry for an additional 3-4 minutes, or until the vegetables are tender yet still vibrant.

        Add Pineapple & Chicken: Stir in the diced pineapple along with the cooked chicken. Combine everything well and allow to cook for an additional 2 minutes, ensuring everything is heated through.

          Incorporate Rice: Gradually add the chilled jasmine rice to the wok, using a spatula to break apart any clumps. Gently fold the rice into the chicken, pineapple, and vegetable mixture until evenly distributed.

            Season the Fried Rice: Drizzle the soy sauce, oyster sauce (if using), and sesame oil over the fried rice. Stir-fry the mixture for about 3-4 minutes, allowing the flavors to meld and the rice to heat through. Taste and adjust seasoning with extra salt and pepper as needed.

              Garnish & Serve: Remove the wok from heat and sprinkle the chopped green parts of the green onions on top. Gently toss to combine. Serve the fried rice hot, garnished with fresh cilantro or basil leaves, and lime wedges on the side for an extra zesty kick.
