Ingredients

1 cup canned pumpkin puree

1/2 cup vegetable oil

1/2 cup brown sugar, tightly packed

1/2 cup granulated sugar

2 large eggs, at room temperature

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon ground ginger

1/2 teaspoon salt

1 cup semi-sweet chocolate chips

Optional: 1/2 cup chopped walnuts or pecans

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare a 9x5-inch loaf pan by greasing it lightly with cooking spray or butter, or line it with parchment paper for easy removal.

Combine Wet Ingredients: In a large mixing bowl, blend together the canned pumpkin puree, vegetable oil, brown sugar, and granulated sugar until the mixture is smooth and well incorporated. Add the eggs, one at a time, mixing until the batter is creamy and uniform. Stir in the vanilla extract for added flavor.

Prepare Dry Ingredients: In another bowl, whisk together the all-purpose flour, baking soda, baking powder, ground cinnamon, nutmeg, ginger, and salt. Make sure all the dry ingredients are well combined to ensure even distribution in the batter.

Merge Mixtures: Gradually fold the dry ingredient mixture into the wet ingredients. Use a spatula or wooden spoon to combine them gently, mixing just until you see no visible flour. Take care not to overmix as this can lead to a dense texture.

Incorporate Chocolate Chips: Carefully add the semi-sweet chocolate chips to the batter, folding them in gently. If you choose to include nuts, fold in the chopped walnuts or pecans at this stage for added crunch and flavor.

Fill and Bake: Pour the prepared batter into the loaf pan, using a spatula to smooth the top if necessary. Place the pan in the oven and bake for 55 to 65 minutes. To check for doneness, insert a toothpick into the center; it should come out clean or with a few moist crumbs attached.

Cool Down: Once baked, remove the loaf from the oven and allow it to cool in the pan for 10-15 minutes. Carefully transfer the loaf to a wire rack to cool completely before slicing. This will help maintain its shape and prevent it from becoming soggy.

Serve Delightfully: Slice the loaf to serve, enjoying it warm or at room temperature. It’s a delightful treat for breakfast, a cozy snack, or a sumptuous dessert. For an extra special touch, consider adding a dollop of whipped cream or a light glaze drizzle over the slices.
