2 cups masa harina (corn flour)

1 1/4 cups warm water (adjust as needed)

1/2 teaspoon salt

1 cup shredded mozzarella cheese (or cheese of your choice, like Oaxaca or cheddar)

1/2 cup refried black beans (or substitute with pinto beans)

1/4 cup finely chopped fresh cilantro

1 teaspoon ground cumin

1/2 teaspoon garlic powder

Cooking oil for frying (such as vegetable oil)

Prepare the Dough: In a large mixing bowl, combine the masa harina and salt. Gradually incorporate the warm water into the flour mixture, using your hands or a wooden spoon to mix until fully combined. The dough should feel pliable but not sticky. If the dough appears too dry, slowly add a bit more water—if it seems too wet, sprinkle in a bit more masa harina until the desired consistency is achieved.

    Make the Filling: In a separate bowl, combine the shredded cheese, refried beans, chopped cilantro, ground cumin, and garlic powder. Stir the mixture thoroughly until all ingredients are well combined and evenly distributed.

      Form the Pupusas: Divide the dough into 8 equal portions, rolling each piece into a ball. Then, flatten each ball into a disk about 1/4 inch thick. In the center of each disk, place a spoonful of the cheese and bean filling. Carefully fold the edges of the disk around the filling to completely encase it, then gently press it back into a flat disk without breaking the dough.

        Cook the Pupusas: Heat a skillet or frying pan over medium heat and add a thin layer of cooking oil. Once the oil is heated and shimmering, place one pupusa in the skillet. Cook for approximately 3-4 minutes on each side, or until the pupusa is golden brown and slightly crispy. Repeat this step with the remaining pupusas, adding a little more oil as needed in between batches.

          Serve: Serve the freshly cooked pupusas warm. They are delightful topped with traditional accompaniments such as curtido (a tangy cabbage slaw) and salsa. Enjoy every bite!
