Ingredients

4 flatbreads (store-bought or homemade)

2 ripe peaches, sliced into wedges

2 tablespoons extra virgin olive oil, divided

1 cup fresh mozzarella cheese, sliced or torn into bite-sized pieces

1/2 cup goat cheese, crumbled

1/4 cup fresh basil leaves, torn or whole

1 tablespoon balsamic glaze (optional)

Sea salt and freshly ground black pepper, to taste

Instructions

Preheat the Grill: Begin by heating your grill to medium-high heat. If you are using a grill pan on the stovetop, set it to medium heat to ensure an even cooking surface.

Prepare the Peaches: In a medium bowl, toss together the sliced peaches with 1 tablespoon of olive oil. Season lightly with sea salt and freshly cracked black pepper, ensuring each slice is coated evenly.

Grill the Peaches: Place the peach wedges directly onto the preheated grill grates. Grill for approximately 2-3 minutes on each side, until they become caramelized and develop beautiful grill marks. Remove the grilled peaches from the heat and set them aside to cool slightly.

Prepare the Flatbreads: Lightly brush one side of each flatbread with the remaining tablespoon of olive oil. This will enhance the crispiness and flavor during grilling.

Assemble & Grill: Lay the flatbreads onto the grill with the oiled side facing down. Evenly distribute the fresh mozzarella slices, crumbled goat cheese, and grilled peach slices on top of each flatbread.

Cook the Flatbreads: Close the grill lid and allow the flatbreads to cook for 4-5 minutes, monitoring closely to avoid burning. You're aiming for melted cheese and crispy edges.

Finish & Serve: Once finished, carefully remove the flatbreads from the grill. Top them generously with torn basil leaves and, if using, drizzle over balsamic glaze for a touch of sweetness. Slice the flatbreads into portions and serve immediately for the best flavor.
