Ingredients

1 lb large shrimp, peeled and deveined

1 cup fresh pineapple, diced

1 tablespoon olive oil

2 teaspoons chili powder

1 teaspoon garlic powder

1 teaspoon ground cumin

Salt and pepper to taste

8 small corn or flour tortillas

1 cup red cabbage, finely shredded

1 ripe avocado, sliced

1/4 cup fresh cilantro, chopped

1 lime, cut into wedges

Optional: hot sauce for serving

Instructions

Marinate the Shrimp: In a medium mixing bowl, combine the peeled and deveined shrimp, diced pineapple, olive oil, chili powder, garlic powder, ground cumin, and a generous pinch of salt and pepper. Toss the mixture until the shrimp and pineapple are evenly coated with the marinade. Allow the shrimp to marinate for at least 10 minutes while you prepare the grill.

Preheat the Grill: Heat your grill to medium-high. If using wooden skewers, soak them in water for 10 minutes to prevent burning, then thread the marinated shrimp and pineapple onto the skewers for easier handling during grilling.

Grill the Shrimp and Pineapple: Carefully place the shrimp and pineapple skewers on the preheated grill. Grill for about 2-3 minutes on each side, or until the shrimp turn pink and opaque and the pineapple develops beautiful grill marks, totaling around 6-8 minutes of grilling.

Warm the Tortillas: While the shrimp and pineapple are grilling, place the tortillas on the grill for about 30 seconds per side, until they become warm, pliable, and slightly toasted.

Assemble the Tacos: Once the shrimp and pineapple are perfectly grilled, remove them from the grill and slide them off the skewers, if using. For each tortilla, layer a handful of finely shredded red cabbage, followed by a portion of grilled shrimp and pineapple. Top with slices of creamy avocado and a sprinkle of fresh cilantro.

Serve: Squeeze fresh lime juice over the assembled tacos and add hot sauce if you like a kick of heat. Serve immediately and savor your vibrant, delicious creation!
