Ingredients

1 cup quinoa, rinsed thoroughly

2 cups vegetable broth or water

1 medium zucchini, diced into bite-sized pieces

1 bell pepper (red or yellow), diced

1 small red onion, diced

1 cup cherry tomatoes, halved

1 cup broccoli florets

2 tablespoons extra-virgin olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper, to taste

1 avocado, sliced

Fresh herbs (such as parsley or cilantro), for garnish

Tahini dressing (store-bought or homemade) for drizzling

Instructions

Preheat the Oven: Set your oven to 425°F (220°C) to allow it to heat up while you prepare the ingredients.

Prepare Quinoa: In a medium saucepan, bring 2 cups of vegetable broth (or water) to a boil. Add the rinsed quinoa, stir, and reduce the heat to low. Cover the saucepan and let it simmer for about 15 minutes, or until all the liquid is absorbed. Once cooked, remove from heat and let it sit for 5 minutes to steam. Fluff the quinoa gently with a fork before serving.

Roast the Vegetables: On a large baking sheet, arrange the diced zucchini, bell pepper, red onion, halved cherry tomatoes, and broccoli florets. Drizzle the olive oil evenly over the vegetables, then sprinkle with garlic powder, smoked paprika, salt, and pepper. Toss everything together until the vegetables are well-coated in the oil and seasonings.

Bake: Place the baking sheet in the preheated oven and roast the vegetables for about 20-25 minutes. You want them to become tender and slightly caramelized. Be sure to stir them halfway through the roasting time for even cooking.

Assemble Power Bowls: In individual serving bowls, layer a generous scoop of fluffy quinoa as the base. Top it with an assortment of the roasted vegetables. Add a few slices of creamy avocado on top, followed by a drizzle of tahini dressing.

Garnish: Add a finishing touch with a sprinkle of fresh herbs to enhance both the flavor and visual appeal of your bowls.

Serve: Enjoy your vibrant quinoa and roasted veggie power bowls either warm or at room temperature, perfect for a wholesome meal any time of the day.
