Melt the Chocolate: In a medium-sized heatproof bowl, combine the finely chopped dark chocolate and a pinch of sea salt. In a saucepan, heat the heavy cream over medium heat until it just begins to simmer. Once simmering, remove it from the heat and immediately pour it over the chopped chocolate. Let it sit for 2-3 minutes to allow the chocolate to soften.

    Combine Ingredients: After the resting time, add the unsalted butter, espresso powder, and vanilla extract to the chocolate mixture. Use a spatula to gently stir until the mixture becomes smooth, glossy, and fully combined. If the chocolate is not melting completely, you can microwave it in short bursts of 10 seconds or place it back on low heat while stirring continuously.

      Chill the Ganache: Cover the bowl with plastic wrap and refrigerate the ganache for about 2 hours, or until it is firm enough to scoop but still soft enough to roll into balls.
