  • 2.0 medium sweet potatoes, peeled and diced
  • 0.45 lb ground turkey
  • 2.0 tablespoon olive oil
  • 1.0 small onion, finely chopped
  • 2.0 clove garlic, minced
  • 1.0 teaspoon dried sage
  • 1.0 teaspoon ground cumin
  • 0.5 cup chicken or vegetable broth
  • 0.5 cup milk or non-dairy alternative
  • 1.0 tablespoon butter or olive oil
  • 0.0 none fresh sage leaves, for garnish

Instructions
 

  • In a large pot, bring salted water to a boil. Add the diced sweet potatoes and cook for about 15 minutes or until fork-tender. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  • Add the ground turkey to the skillet. Break it apart with a wooden spoon and season with dried sage, ground cumin, salt, and pepper. Cook until the turkey is browned, about 7-10 minutes.
  • Pour in the chicken or vegetable broth, and let it simmer for about 5 minutes, allowing the flavors to meld together.
  • In a mixing bowl, combine the cooked sweet potatoes, milk, and butter. Mash until smooth and creamy, adjusting the consistency with more milk if needed. Season with salt and pepper to taste.
  • In serving bowls, spoon a generous portion of the creamy sweet potato mash, then top with the savory turkey mixture.
