1 lb fresh salmon fillet, skinless

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

1/4 cup low-sodium soy sauce

2 tablespoons honey or maple syrup (your choice)

1 tablespoon fresh lemon juice

1 teaspoon lemon zest

1 head of romaine lettuce, leaves separated and thoroughly washed

1/2 cup shredded carrots

1/2 cup cucumber, finely diced

1/4 cup fresh cilantro, chopped (optional)

Lime wedges, for serving

Prepare the Salmon: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy clean-up. Place the skinless salmon fillet on the sheet, drizzle it with olive oil, and evenly coat it with garlic powder, onion powder, smoked paprika, salt, and pepper. Bake in the preheated oven for 12-15 minutes, or until the salmon is fully cooked and flakes easily when tested with a fork.

    Make the Lemon Glaze: In a small saucepan, combine the low-sodium soy sauce, honey (or maple syrup), fresh lemon juice, and lemon zest over medium heat. Allow the mixture to come to a gentle simmer. Let it cook for 4-5 minutes, stirring occasionally, until the glaze has slightly thickened. Remove from heat and set aside to cool.
