Savory Pumpkin & Mushroom Risotto

1 cup Arborio rice

1 small onion, finely chopped

3 cloves garlic, minced

2 cups pumpkin puree (fresh or canned)

2 cups vegetable broth

1 cup sliced mushrooms (cremini or portobello)

1/2 cup dry white wine (optional)

1/2 cup grated Parmesan cheese

1 tablespoon olive oil

1 tablespoon unsalted butter

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Aromatics and Mushrooms: In a large saucepan, heat the olive oil and butter over medium heat until melted. Add the finely chopped onion and sauté for about 3-4 minutes, or until it becomes translucent. Next, stir in the minced garlic and sliced mushrooms, cooking for an additional 5 minutes. The mushrooms should be tender and browned at this point.

    Toast the Arborio Rice: Add the Arborio rice to the pan, stirring well to coat the grains with the flavorful mixture. Toast the rice for 1-2 minutes, letting it absorb the aromas of the vegetables.

      Deglaze the Pan: Pour in the dry white wine (if using), and stir continuously. Allow the wine to simmer until it is mostly absorbed by the rice, which should take about 2-3 minutes. This step adds depth of flavor.

        Gradually Incorporate Vegetable Broth: Start adding the vegetable broth to the rice mixture, one ladleful at a time. Stir frequently and let each addition of broth be absorbed before adding the next. Continue this process for approximately 18-20 minutes, or until the rice is creamy and al dente.

          Stir in the Pumpkin: Once the risotto reaches the desired consistency, gently fold in the pumpkin puree and fresh thyme. Allow the mixture to heat through for an additional 2 minutes.

            Finish with Cheese: Remove the saucepan from heat and mix in the grated Parmesan cheese until it melts smoothly into the risotto. Taste and season with salt and pepper as needed.
