1 cup fig jam (store-bought or homemade)

4 large flour tortillas

1 cup goat cheese, crumbled

1 cup shredded mozzarella cheese

1 tablespoon olive oil

1 teaspoon fresh thyme leaves (optional)

Pinch of salt and freshly cracked pepper

Honey or balsamic glaze for drizzling (optional)

Prepare the Filling: In a medium mixing bowl, combine the crumbled goat cheese, shredded mozzarella, and fresh thyme leaves (if using). Season the mixture with a pinch of salt and freshly cracked pepper. Mix thoroughly until all ingredients are evenly incorporated, resulting in a flavorful cheesy filling.

    Assemble the Quesadillas: On a clean work surface, lay out two flour tortillas. Spread approximately 1/4 cup of fig jam evenly over each tortilla, ensuring a generous layer. Then, divide the cheesy filling evenly between the two tortillas, sprinkling it on top of the fig jam. Carefully place the remaining two tortillas on top to create two quesadillas.

      Heat the Pan: In a large skillet, heat the olive oil over medium heat. Allow the oil to warm up until it shimmers slightly, indicating that it’s hot enough for cooking.

        Cook the Quesadilla: Gently place one quesadilla in the skillet. Cook for about 3-4 minutes, or until the bottom is a beautiful golden brown and the cheese begins to melt.
