Grilled peaches are at the heart of this platter, offering a unique flavor profile that is both sweet and slightly smoky. When peaches are grilled, the heat causes the natural sugars in the fruit to caramelize, enhancing their sweetness and imparting a subtle char that adds depth to their flavor. This transformation creates a delicious contrast when paired with the creamy burrata, making each bite a delightful experience.

Ingredients

4 ripe peaches, cut in half and pitted

2 tablespoons extra virgin olive oil

Sea salt, to taste

Freshly ground black pepper, to taste

1 ball of burrata cheese (approximately 8 ounces)

2 cups arugula (or a mix of your favorite greens)

2 tablespoons balsamic reduction, for drizzling

Fresh basil leaves, for garnish

Optional: Slices of crusty bread or crostini, for serving

Instructions

Preheat the Grill: Start by preheating your grill to medium heat, ideally between 350°F - 400°F, to ensure the perfect sear on your peaches.

Prepare the Peaches: Brush the cut sides of the peach halves generously with extra virgin olive oil to enhance their flavor. Lightly sprinkle with sea salt and freshly ground black pepper for a balanced taste.

Grill the Peaches: Carefully place the peach halves cut-side-down on the preheated grill. Grill them for approximately 4-5 minutes until they caramelize and develop beautiful grill marks. Afterward, flip them over and grill for an additional 2-3 minutes to warm them through.

Assemble the Platter: On a large serving platter, create a lush bed of arugula or mixed greens as a vibrant base for your dish.

Layer the Burrata: Tear the burrata cheese into large, rustic pieces and place them artfully on top of the greens, allowing the creamy texture to contrast the sweetness of the peaches.

Add the Grilled Peaches: Once the peaches are grilled to perfection, carefully remove them from the grill. Place them cut-side-up on the platter alongside the burrata for a stunning presentation.

Drizzle with Balsamic Reduction: Lightly drizzle the balsamic reduction over the peaches and burrata. This adds a tangy sweetness that beautifully complements the other flavors.

Garnish and Serve: Finish the platter with fresh basil leaves scattered over the top for a pop of vibrant color and aromatic freshness. If desired, serve with slices of crusty bread or crostini on the side, perfect for scooping up the burrata.
