2 medium zucchinis, thinly sliced

1 cup shredded cheese (cheddar, mozzarella, or a blend for a unique flavor)

4 large flour tortillas

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

Optional toppings: sour cream, salsa, guacamole, chopped fresh cilantro

Prep the Zucchini: In a large mixing bowl, add the thinly sliced zucchinis and drizzle with olive oil. Sprinkle in the garlic powder, onion powder, smoked paprika, salt, and pepper. Toss everything together until the zucchini slices are well coated with the seasonings.

    Cook the Zucchini: Heat a non-stick skillet over medium heat. Add the seasoned zucchini slices to the pan, spreading them out evenly. Sauté the zucchini for about 5-7 minutes, stirring occasionally, until they become tender and develop a light golden brown color. Once cooked, remove the skillet from heat and set the zucchini aside.

      Assemble the Quesadillas: On a clean surface or cutting board, place one flour tortilla. On one half of the tortilla, sprinkle a generous amount of shredded cheese, followed by an even layer of the sautéed zucchini. For added flavor and to help the quesadilla hold together, sprinkle a little more cheese on top of the zucchini. Fold the tortilla over to create a half-moon shape. Repeat this process for the second quesadilla.

        Cook the Quesadillas: Wipe the skillet clean and return it to medium heat. Carefully place the folded quesadilla in the skillet. Cook for approximately 3-4 minutes on one side, or until the tortilla is golden brown and crispy. Gently flip the quesadilla over and cook for an additional 3-4 minutes until the other side is golden and the cheese has melted thoroughly.
