Slow Cooker Spicy Lentil Soup

1 ½ cups dried green or brown lentils, rinsed and drained

4 cups vegetable broth

1 can (14.5 oz) diced tomatoes, with juice

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 tablespoon olive oil

2 teaspoons ground cumin

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust according to your spice preference)

1 teaspoon turmeric

Salt and pepper to taste

2 cups fresh spinach or kale, chopped

1 tablespoon lemon juice

Fresh cilantro or parsley, for garnish (optional)

Prep the Vegetables: Start your cooking adventure by dicing the onion, carrots, and celery into small cubes for even cooking. Mince the garlic finely to release its flavor. Once done, set the prepared vegetables aside.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat until shimmering. Add the diced onion and sauté until they turn translucent, which should take about 5 minutes. Next, incorporate the minced garlic, diced carrots, and celery into the pan. Continue to sauté for an additional 3-4 minutes until the vegetables begin to soften, releasing their delicious aromas.

      Combine in Slow Cooker: Carefully transfer the sautéed vegetable mixture into your slow cooker. Add the rinsed lentils along with the vegetable broth, canned diced tomatoes (including their juices), ground cumin, smoked paprika, cayenne pepper, turmeric, and a pinch of salt and pepper. Stir well to ensure all ingredients are thoroughly combined.

        Cook the Soup: Place the lid on the slow cooker and set it to low heat. Let the soup cook for 6-8 hours, or alternatively, you can set it to high for 3-4 hours. The lentils should be tender and flavorful when done.
