Ingredients

2 medium zucchinis, diced into small pieces

1 large carrot, finely chopped

1 red bell pepper, diced

1 cup mushrooms, chopped (button or cremini work well)

1 medium onion, diced

4 cloves garlic, minced

1 can (14 oz) crushed tomatoes

1 can (15 oz) lentils, drained and rinsed

2 tablespoons tomato paste

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon dried thyme

½ teaspoon red pepper flakes (optional, for a spicy kick)

Salt and pepper to taste

2 tablespoons olive oil

1 cup vegetable broth

Fresh basil for garnish

Grated Parmesan cheese (optional, for serving)

Instructions

Prep the Vegetables: Begin by chopping all your vegetables including the zucchinis, carrot, bell pepper, onion, and mushrooms. Mince the garlic and set all the prepared vegetables aside in a bowl.

Sauté for Enhanced Flavor: In a skillet over medium heat, pour in the olive oil. Add the diced onion and minced garlic, sautéing for approximately 3-4 minutes until they are soft and aromatic.

Combine Ingredients in the Slow Cooker: Transfer the sautéed onion and garlic into the slow cooker. Then add in the diced zucchini, carrot, bell pepper, chopped mushrooms, crushed tomatoes, lentils, tomato paste, and vegetable broth. Sprinkle in the dried oregano, basil, thyme, and red pepper flakes (if using). Season generously with salt and pepper.

Mix Thoroughly: Using a large spoon, stir all the ingredients together until they are evenly combined and well mixed.

Slow Cook for Perfect Results: Cover the slow cooker with its lid and set it to cook on low for 6-8 hours or on high for 3-4 hours. This slow cooking allows the vegetables to become tender and the flavors to meld beautifully.

Taste and Adjust Seasoning: After the cooking time, taste the Bolognese sauce and adjust the seasoning to your preference. For a thicker sauce, you can leave the lid slightly ajar and continue to cook for an additional 30 minutes.

Serve Creatively: Serve the hearty veggie Bolognese over your favorite type of pasta. For a fresh touch, garnish each serving with freshly torn basil leaves. If desired, sprinkle with grated Parmesan cheese for added richness.

Enjoy Every Bite: Grab a fork and dive into your cozy, comforting bowl of veggie goodness!
