1 can (15 oz) chickpeas, rinsed and drained

1 ripe avocado

1 tablespoon fresh lemon juice

1 garlic clove, minced

1 teaspoon ground cumin

Salt and freshly ground black pepper, to taste

8 small whole grain or gluten-free tortillas

1/4 cup cherry tomatoes, diced

2 green onions, finely chopped

Fresh cilantro or parsley for garnish

Optional: red pepper flakes for a spicy kick

Prepare the Chickpeas: In a medium-sized mixing bowl, add the rinsed and drained chickpeas. Using a fork or a potato masher, gently smash the chickpeas until they are slightly chunky, allowing for a spreadable texture but retaining some bites.
