1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons smoked paprika

1 tablespoon garlic powder

1 teaspoon ground cumin

Salt and freshly ground black pepper, to taste

½ cup BBQ sauce (store-bought or homemade)

2 cups green cabbage, finely shredded

1 medium carrot, grated

¼ cup fresh cilantro, finely chopped

2 tablespoons apple cider vinegar

1 tablespoon honey or maple syrup (for a vegan alternative)

4 large whole wheat or spinach tortillas

Optional toppings: sliced avocado, jalapeños, or hemp seeds

Prep the Chickpeas: In a mixing bowl, add the drained and rinsed chickpeas. Pour in the olive oil, and sprinkle the smoked paprika, garlic powder, ground cumin, salt, and pepper over them. Toss everything together until the chickpeas are well coated in the spices and oil.

    Cook the Chickpeas: Heat a non-stick skillet over medium heat. Once hot, add the seasoned chickpeas and sauté them for about 5-7 minutes. You want them to crisp up and develop a lovely smoky aroma. Once they are nicely toasted, pour in the BBQ sauce, stirring well to coat the chickpeas.       Prepare the Coleslaw: In a separate bowl, combine the finely shredded cabbage, grated carrot, and chopped cilantro. Add the apple cider vinegar and honey or maple syrup.
