Ingredients

1 can (15 oz) black beans, drained and rinsed

1 cup sharp cheddar cheese, shredded

1/2 cup smoked gouda cheese, shredded

1/2 medium red onion, finely diced

1 medium red bell pepper, diced

1 jalapeño, seeded and minced (optional for added heat)

1 tsp smoked paprika

1/2 tsp ground cumin

1/2 tsp garlic powder

Salt and black pepper to taste

4 large flour tortillas

2 tbsp olive oil (divided)

Fresh cilantro, finely chopped, for garnish

Sour cream or Greek yogurt, for serving

Instructions

Prepare the Filling: In a large mixing bowl, combine the drained and rinsed black beans, shredded sharp cheddar, shredded smoked gouda, finely diced red onion, diced red bell pepper, minced jalapeño (if using), smoked paprika, ground cumin, garlic powder, and a sprinkle of salt and pepper. Using a fork, gently mash the black beans, allowing some beans to remain whole for a delightful texture in every bite.

Heat the Pan: In a large skillet, heat 1 tablespoon of olive oil over medium heat. If you prefer, use a non-stick pan or a griddle to ensure even cooking and crispiness.

Assemble the Quesadillas: Place one tortilla flat on a clean work surface. Spoon a generous amount of the black bean filling onto one half of the tortilla, leaving about half an inch around the edges to prevent spillage. Fold the other half of the tortilla over the filling, pressing down gently to secure.

Cook the Quesadillas: Carefully transfer the assembled quesadilla to the hot skillet. Cook for about 3-4 minutes until the bottom is golden brown and crispy. Flip the quesadilla carefully using a spatula, adding a little more olive oil to the skillet if needed, and cook for an additional 3-4 minutes on the other side. Repeat this cooking process with the remaining tortillas, ensuring each quesadilla is equally crispy and delicious.

Slice and Serve: Once cooked, remove the quesadillas from the skillet and place them on a cutting board. Allow them to rest for a minute before slicing each quesadilla into wedges. Garnish with fresh chopped cilantro for a pop of color and freshness. Serve with a side of sour cream or Greek yogurt for dipping.

Enjoy: Dive into the smoky, cheesy goodness of these quesadillas, savoring each delicious bite!
